A good old favourite, the Oreo Cheesecake, transformed into mini goodness!
These little bites are very dangerous because they are that good.
You will need
A pack of OREOS! (for crushing inside and for base)
500g softened Cream Cheese
3/4 cup Caster Sugar
3 teaspoons gelatine dissolved in 1/4 cup of boiling water
2 tablespoons lemon juice
1 cup cream lightly whipped
1. Line a muffin tray with paper wrappers and pop OREO cookies in the bottom!
2. Beat the cream cheese and sugar with electric mixer until smooth.
3. Fold in the gelatine mixture, lemon juice, cream and some crushed Oreo cookie crumbs.
4. Pour the filling on top of your Oreos in the muffin tray and refrigerate for 2.5 hours or until set!
You can either split your Oreo cookies to make cheesecake sandwiches or leave a whole cookie in the bottom.
